These are small, so I usually only fill with meat & cheese, then put the lettuce & tomatoes on the side. These are real Gorditas! Gorditas 3 1/2 c. Masa Harina 2 1/4 c. warm water 1/4 c. lard or veg. shortening 1 t. salt 1/2 c. flour 2 t. baking powder Mix masa with water, add lard (or shortening), salt, flour & baking powder, kneading until blended & a masa ball forms. Wet hands, shape into 1 1/2 to 2 inch balls. Cover to prevent drying. Heat griddle or comal to med/med-high heat. With moistened hands, pat and flatten into 1/4 inch patties, forming a 3 to 4 inch circle. Place gordita on hot comal or griddle. Cook each side 6 to 8 minutes or until lightly browned. Fry each gordita in 375 degree oil until lightly browned. Remove, drain. Slice gordita halfway through, forming a packet. Fill with seasoned meat, cheese, lettuce, tomato, onion & sour cream. Makes 12 to 14
