For each salad you will need: * Romaine Lettuce, torn into pieces * Mixed Spring Greens * Grilled Boneless/Skinless Chicken Breasts, in bite sized pieces * Diced Apple * Dried Cranberries * Grape Tomatoes * Toasted Almonds * Raspberry Vinaigrette - recipe follows Make your salads with the above ingredients and serve with Raspberry Vinaigrette. RASPBERRY VINAIGRETTE 3 TBS seedless all-fruit raspberry jam 1/3 cup or less of red wine vinegar (I start with much less and taste as I go) 1/4 tsp salt 1/4 tsp black pepper 1 cup olive or vegetable oil Microwave jam, uncovered, on high for 15 seconds or until it melts. Add vinegar, salt and pepper. Whisk until combined. Add oil slowly in thin streams, whisking constantly until thoroughly blended. Serve at once or store up to 2 weeks in the refrigerator. Makes about 1-1/2 cup.
