Spinach Tortellini Salad
2 small packages frozen tortellini
1 package baby spinach
ranch dressing (Hidden Valley Ranch is good w/this)
grated parmesan cheese
1 package pre-cooked bacon
Boil tortellini and cool. Prepare bacon to your liking, then crumble. Once the tortellini is cooled, toss with spinach. Drizzle ranch dressing, amount to your liking. Sprinkle with bacon and parmesan cheese (amount to your liking). Chill until ready to serve.
Great any time of the year, but especially summer b/c it's so simple.
