I came up with this version for brunch and they were a hit! ;D Bean's Armadillo Eggs 10 to 12 large fresh jalapenos 1 package cream cheese 1 lb. hot sausage 1 c. Bisquick 1/2 c. shredded cheddar cheese 1 T. Cavender’s Seasoning 1/2 c. bread crumbs 1 T. Cavender’s Seasoning Cut the tops off the jalapenos, scoop out the seeds and then stuff with cream cheese. Mix the sausage, Bisquick, Cavender’s and cheddar cheese. Mix the bread crumbs and the 2nd part of the Cavender’s in a bowl. Take a scoop of the sausage and wrap around the stuffed jalapenos, roll in the bread crumb mixture and place on a sprayed baking sheet. Continue with the rest of the peppers. Bake in a 400º for about 15 minutes (turning once), until golden. Serve with sour cream.
