I got this recipe from a Taste of Home 2002 Holiday Cookbook and decided to make them this evening. They are really good. I had some extra filling left over but was afraid to overstuff them. Taste good right out of the oven.
Spinach Crescents
1/2 cup sliced almonds 1 package (10 oz) frozen chopped spinach, thawed and squeezed dry 1/2 cup grated parmesan cheese 1/4 cup chopped onion 2 tsp olive oil 1/4 tsp salt 1/8 tsp pepper 1 package (8 oz) refrigerated cresent rolls
In a food processor, finely chop almonds. Add spinach, parmesan cheese, onion, oil, salt and pepper; cover and process until well blended. Unroll and separate the crescent rolls into 8 pieces. Spread spinach mixture evenly over dough to within 1/8" of edges. Roll up and place on greased baking sheet. Bake 375* for 15-18 minutes or until golden brown. Serve warm.
Makes 8 servings
