Kofta In Tomato Sauce
1 Cup Bread Crumbs 2 Pounds Ground Beef Or Lamb 1 Small Onion -- Grated 4 Cloves Garlic -- Chopped 2 Medium Eggs 1 Teaspoon Paprika 1 Tablespoon Cumin 1/2 Bunch Parsley -- Chopped Salt And Pepper -- To Taste 3 Tablespoons Olive Oil 1 Can Tomato Paste 1 Can Tomatoes -- Diced 2 Cups Beef Stock Salt And Pepper -- To Taste 2 Large Pepperocini Peppers -- Chopped Combine all ingredients, down to olive oil. shape meat into 16 balls, heat oil in skillet, add meatballs, and brown all over about 8 minutes. Place in ovenproof dish and set aside. bring tomato paste, tomatoes, stock, salt and pepper to a boil. simmer 5 minutes. Pour over meatballs, sprinkle with chopped peppers, cover, bake at 350 degrees for 40 minutes.
