Nacho Beef Skillet
1 lb. ground beef 1 medium onion, chopped 1/2 (4 oz.) can chopped green chilies (I was using leftovers) 1/2 t. ground cumin 1/2 t. smoked paprika 1 can (15 oz. -ish) petite diced tomatoes, drained 1 can nacho cheese soup 1/2 c. milk 2 c. cooked corkscrew pasta 1 c. shredded cheddar cheese
Garnish: black olive slices, sour cream & green onions
Cook pasta as directed on package & set aside. Brown beef in a large deep skillet. Drain off fat. Add onions, green chilies, cumin & paprika and cook until onions are soft. Add tomatoes, soup & milk; stirring to combine. Cook until mixture is heated through. Add pasta & cheese. Cook until cheese melts. Dish it out and garnish as suggested. Enjoy!
