These are a really old cookie my mom used to make for her father. I think the recipe came from her Grandmother. I love these cookies. The recipe was just jotted down on a piece of paper so I tried my best to put it into true recipe form - LOL.
Raisin Filled Cookies
CREAM TOGETHER: 1 cup sugar, 1/2 cup Crisco shortening MIX IN: 1/2 cup sour milk, 1 egg, 1 tsp vanilla SIFT INTO THE CREAMED MIXTURE: pinch salt, 1/4 tsp baking soda, 1 tsp baking powder ADD: enough all purpose flour to make dough stiff enough to roll out but not sticky. Cut into 2-3" squares or circles and add a small dollop of the filling to the center. Pinch edges to seal in filling. Bake in 350* oven till bottoms are browned (about 7-10 mintues).
~FILLING~ 1 cup raisins (regular, golden or mixed) 1/2 cup sugar 1/2 cup water pinch salt
Cook in a saucepan for about 20 minutes. Add a small amount of flour until it thickens. Cool slightly.
