This came from a low carb cookbook.....We all love this dish.
MY GRANDMA'S STANDBY CASSEROLE
1 pound ground beef 2 TBS butter 1 clove garlic, crushed 1 tsp salt dash pepper 2 cans (8oz each) plain tomato sauce 6 scallions 3oz cream cheese 1 cup sour cream 3 cups cooked spaghetti squash 1/2 cup shredded cheddar
Preheat oven to 350 degrees. Brown beef in butter -pour off grease. Stir in garlic, salt, pepper, tomato sauce. Cover and turn burner to low. Simmer for 20 minutes. While meat is simmering, slice scallions including crisp part of the green and combine with cream cheese and sour cream. Blend well. In bottom of of 6 cup casserole, layer 1/2 squash, half scallion mixture, 1/2 beef/tomato mixture. Repeat layers. Top with cheddar. Bake 20 minutes
