Bean’s Chicken Enchiladas
Dump into crockpot-
Chicken breasts, boneless, skinless (I package)
Water, about 1 to 2 inches over chicken
3 to 4 chicken bullion cubes
1 packet taco seasoning or enchilada seasoning
1 can chopped green chiles
Onion, chopped
Cook in crockpot until chicken falls apart. Remove with a slotted spoon (shred with two forks) & add another can of green chiles to the chicken mixture. Roll in flour tortillas with shredded cheese (cheddar, mont. jack, colby – your pick). Place in a greased casserole dish & pour canned green chili sauce OR red enchilada sauce over (cover completely). Bake @ 350º for 30 to 40 minutes, until hot.
