These are one of my absolute favorite cookies at Christmas time. I use more anise than what the recipe calls for because I love the heavy flavor.
Italian Anise Cookies
3/4 cup sugar 1 stick unsalted butter, melted 2 large eggs 1/4 cup milk 1 tsp anise extract 2-3/4 cups flour 2-1/2 cups baking powder 1/4 tsp salt
Heat oven to 350*. Spray cookie sheets. Beat 1st five ingredients in a large mixing bowl until blended. On low speed, beat in the next 3 ingredients. Drop by rounded spoonfuls, 2-inches apart, on cookie sheets.
Bake 8-10 minutes until bottoms are light golden - DO NOT OVERBAKE. Remove to a rack to cool. Dip tops in glaze and then sprinkle with multi-colored sprinkles.
GLAZE: Whisk 1 cup powdered sugar, 4-5 tsp milk and 1 tsp anise extract in a small bowl.
