Chili Rice Recipe - 2 cups of already cooked white rice - 4 oz. can of well drained chopped green chillies or jalapenos - 2 eggs - 2 cups of grated cheese (Monterey Jack) - 1 cup of milk Instructions Preheat oven at 350°F. Beat the eggs in a large bowl. Stir in the cooked rice, 1 cup of the cheese, milk and chillies. Pour the mixture into a greased oven bowl (preferably a glass casserole). Lay the remaining cheese on top of the mixture and cook in oven for about one hour.
