Caribbean Rice
Adapted from SOAR - Searchable Online Archive of Recipes
2 cups hot cooked rice 11 ounces canned mandarin oranes, drained 8 ounces canned crushed pineapple ( i leave these out) 1/2 cup chopped red pepper 1/3 sliced green onions 2 Tbsp mango chutney 1/4 tsp ground ginger
Combine all in large skillet over medium high heat. Stir and cook until ingredients are blended and thoroughly heated.
