This recipe is my own and has been often requested for family get-togethers. The meatballs are light and fluffy after cooking in the sauce all day.
Light as air Turkey Meatballs
1 lb. ground turkey 1/2 c. seasoned bread crumbs 2 T. dried minced onion 2 t. italian seasoning 2 T. grated parmesan cheese 2 t. minced garlic 1/2 t. salt 1/4 t. black pepper 1 egg white 1 T. vegetable soup mix (see note)
Mix all ingredients together until well combined. Shape into ping pong ball sized meatballs. Heat a large skillet over medium heat. Add a touch of olive oil to the pan and when it's hot add the meatballs. Shake pan often and when meatballs start to brown turn and brown on the other side. They will still be raw on the inside - you just want to brown them enough so that they hold their shape. Add your favorite spaghetti sauce to your crockpot. dump in the meatballs. Top with a second jar of spaghetti sauce and set to low. cook at least 6 hours but the longer it cooks the better.
Note: I purchased a variety of soup and seasoning mixes that come in 14.1 oz. plastic jars by Osem. They were cheap - only $2.69 so I bought beef, chicken, vegetable , onion & mushroom. They're great for adding to recipes and much cheaper than the Lipton soup mixes at 29 servings per container! If you can't find these Lipton vegetable soup mix will work. ;D
