I am loving all your recipe's so thought I would share some of mine, I got alot of mine from rz, quick cooking and Love all those church and neighborhood cookbooks. I love to try new recipe's and this is one I have to make quite often. I use extra topping though. Enjoy!
Crunchy Chicken Casserole
1 cup chopped celery 1 TB butter 3 cups cooked chicken breasts 1 1/2 cups cooked rice *I made 2 cups of long grain in the bag* 1 (10.75 oz) can cream of chicken *Undiluted* 3/4 cup mayonnaise *Not Miracle whip* 1 (8-oz) can sliced water chestnuts, drained * I cut them up into quarters* 1/2 cup sliced almonds *bought the small pack of slivered almonds* *also browned them in butter for a minute* 2 TB chopped onions
TOPPING 1 TB melted butter 1/2 cup crushed corn flakes, *I used 3/4 cup* probably more, lol
You can cook your chicken and rice the night before if you want or that day.. In a skillet, saute the celery and onion in butter until tender Remove from heat and add the next 8 ingredients, * I mixed in a bowl* Spoon into a greased 9x13 pan Combine Melted Butter and Cornflakes. Sprinkle On top Bake 350 for 30-45 minutes BonAppetite&Enjoy!!
