Creamy Four Cheese Macaroni
1/3 cup all purpose flour 2 2/3 cups low-fat milk 3/4 cup shredded Swiss cheese 1/2 cup fresh Parmesan cheese 1/2 cup shredded Cheddar cheese 3 oz processed cheese 6 cups cooked elbow macaroni 1/4 tsp salt 12 Melba toasts, crushed 1 Tbsp butter, melted
Preheat oven to 375 degrees. Place flour in heavy large saucepan over medium heat. Slowly add milk, whisking until well blended and thick. Add cheeses stirring constantly until cheese melts. Remove from heat and stir in macaroni and salt. Pour into a greased 2-quart casserole. Mix together toast crumbs and butter. Sprinkle on top of casserole and bake for 30 minutes.
