My version of Greek Salad Romaine lettuce, washed, dried and torn into bite-sized pieces Tomato wedges Thin sliced cucumbers Thin sliced red onions Whole pepperoncini Pitted Kalamata olives Diced or crumbled Feta cheese (I prefer the stuff in the salted brine) Greek Salad Dressing (recipe to follow) Make up each salad by placing the romaine lettuce in salad dishes. Top with a few of each ingredient and then dressing. ~~~~~~~~~~~~~~~ Greek Salad Dressing 1/2 cup extra virgin olive oil 2 TBS red wine vinegar 1 TBS fresh lemon juice 1 tsp garlic powder 1/4 tsp fresh ground pepper 2 TBS dried oregano, crushed 3/4 tsp salt 1 TBS grainy Dijon mustard 1 pinch of thyme In a bowl, whisk together dressing ingredients except olive oil until smooth. Gradually whisk in olive oil in a steady stream till thickened. Cover till ready to use. I like to prepare at least an hour ahead to let the ingredients reach maximum flavor.

Now this dressing has no sweetness to it so if you like to reduce the tartness of the mustard and vinegar, just add a sprinkle of white sugar.
