Nom Ga ( Vietnamese Chicken Salad ) Ingredients:
2 large chicken breasts 1 thick slice fatback pork 1/2 cucumber 3 small carrots 1/4 cup shelled roasted peanuts 6 large cooked shrimp, peeled 4 tbsp wine vinegar 1 tsp sugar salt
Directions:
Cook the chicken and pork by boiling them separately over a medium heat until both are tender. When they are thoroughly cooked, remove them from the heat, drain them and allow them to cool.
Peel and dice the cucumber, then place it in a sieve or colander and sprinkle it with salt. Let it stand for 10 to 15 minutes then rinse and drain it well. The carrots should be peeled and coarsely grated and the peanuts ground. You may use a blender or coffee grinder to do this.
Shred the chicken into medium to large pieces. Cut the pork into thin strips. Slice the shrimp into 1/2" pieces. Combine the chicken, shrimp, pork, cucumber and grated carrots into a large bowl. Add the sugar and vinegar. Mix the ingredients well, salt to taste and chill it into the refrigerator. Just before serving, mix in all but one tablespoon of the peanuts, sprinkling the remaining peanuts on top.
