Stuffed Pablanos
2 pablanos 1/2 lb ground beef - browned and drained half a medium onion small dice 1 clove of garlic, minced 1-2 T tomato paste 2T dried parsley 1 egg 1/2 c fine bread crumbs 2/3 c cooked long grain rice s&p
Note: the measurements are very rough - basically a little more meat than rice, a little more rice than onion and a little more onion than crumbs.
Cut a narrow wedge out of the peppers to facilitate cleaning and filling.
Remove the vanes and seeds.
Mince the part of the pepper that was removed very finely
Cook a cup of rice in the rice cooker
put the browned ground beef in a large mixing bowl
Saute the onions until tender, add the garlic near the end, then lastly stir in the tomato paste.
Combine all the ingredients in a large bowl and mix well.
Stuff the peppers and bake in a covered dish at 350 for about 30 minutes
Remove from oven and top with a bit of shredded cheese. Return to oven for about 10 minutes until cheese starts to brown.
