Mashed Potato Souffle 4 c mashed potatoes 8 oz cream cheese 1 beaten egg Salt & pepper 1/3 c onion, chopped 1/4 c pimiento, chopped (I used a 4 ounce jar drained very well) 2 oz canned green chiles, diced (I used a 4 ounce can) 1. Blend cream cheese into mashed potatoes, add egg, salt, pepper, chopped onion pimiento and green chiles. Mix well. 2. Bake in a quart casserole for 45 minutes at 350, longer, if using shallow casserole. Recipe by: Source: Patricia Dwigans The leftovers make a killer "potato skin" pizza! ;D
