I use regular lentils, still can't find red. I add 1/2 of a red bell pepper. This is awesome & you never miss the meat! We love this recipe. Red Lentil Tostadas 1 cup red lentils 2 cups vegetable or chicken broth 1 medium onion, chipped 3 jalapeno or Serrano chili peppers, seeded and chopped 2 cloves garlic, minced 1 tbs cooking oil 1 tsp ground cumin ½ cup taco sauce 6 tostada shells 1 cup shredded lettuce 1 medium chopped tomato Clean the lentils and add to broth mixture, bring to a boil. Cover it and let it sit for about 20 to 30 min or until the lentils are cooked and the water is absorbed. While the lentils are cooking get started on the onion, pepper mixture. In another skillet add the oil, garlic, onion and chili peppers; cook until the onions are nice and soft. Add in the cumin and mix around for about 45 to a min. After this take off the heat, if the lentils are done then add the onion mixture to the cooked lentils and keep on a low heat, stir occasionally until ready to serve. When you are ready to serve, take the tostada shells and place lentil mixture on top, add lettuce, cheese tomato and taco sauce and serve.
