Cauliflower Patties With Asian Side-Salad
Serves 4
1 head, cauliflower, cut into florets 1/4 (or more) of finely diced onion 1 egg 2 slices bread 1/4 c. sunflower seeds 2 T. sesame seeds salt and pepper ground almonds, about 1/2 cup or so
Directions: Preheat oven to 300. Steam (or cook in water) the cauliflower for 10 minutes, until tender. Mash in a bowl. Saute the onions in a little oil for a few minutes. Add to bowl. Process the seeds and bread in a food processor until finely crumbed. Add to the bowl. Add egg to slightly cooled mixture, and mix all. Season with salt and pepper. Form into patties, and coat sides in ground almonds. Fry in pan with 1 T or less of oil, just until browned on both sides. Place on baking sheet, and when finished frying all patties, bake for 10 minutes. Serve hot with an Asian side salad: mix 3 T extra-virgin olive oil, 1 T. rice vinegar, 1 tsp Dijon mustard, salt and pepper to taste, 1 tsp honey, 1/2 tsp sesame oil; whisk all. Serve on greens with salad with shredded (not grated) Parmesan.
