Dough: ~4 cups flour, sifted if you want ~1 tsp. salt ~4 eggs ~@1/2c water, til dough is sticky Mix above ingredients, adding enough water to make sticky dough. Roll out on floured suface, thin as a pie crust. Cut into @6 inch circles. Fill with cheese and fold shut. Use water around inner circle to seal edges. Crimp edges shut. Filling: ~2 lbs. dry cottage cheese or crumbly Farmer's cheese ~2 eggs ~2 tsp. salt Mix well. Boil until pierogis float. Fry in butter until browned. May add onions to saute with in pan. Salt and eat!

I would like to make these, but where would I find dry cottage cheese, or Farmers cheese? I looked last time I was at the Grocery store, and could'nt find it.

Emibee, if you have a deli at your walmart try there for the farmers cheese. I also think ricotta cheese would work in these but maybe ask Maddison before you make them.
