These were good. I made the 1 1/2 pound and only made 16 sticks. Parmesan-Herb Breadsticks Biggest Book of Bread Machine Recipes Ingredients size 1 1/2- pound (2-pound) 1 c water (1 ¼ c) 2 T olive oil (3 T) 2 1/3 c bread flour (3 c) 2/3 c whole wheat flour (1 c) 1/3 c grated Parmesan cheese (1/2 c) 1 t dried Italian seasoning, crushed (1 ¼ t) ¾ t salt (1 t) 1 t active dry yeast (1 ¼ t) 1 slightly beaten egg white (1) 1 T water (1 T) 1 T grated Parmesan cheese (2 T) Select the recipe size. Add the first 8 ingredients to the machine according to the manufacture’s directions. Select the dough cycle. When cycle is complete, remove dough. Punch down. Cover and let rest for 10 minutes. Grease baking sheets; set aside. Divide the 1 ½-pound dough into 24 portions (divide the 2-pound dough into 32 portions). On a lightly floured surface, roll each portion into an 8-inch rope. Place breadsticks, 2 inches apart, on prepared baking sheets. Cover and let rise in a warm place about 30 minutes or until nearly doubled. In a small bowl, combine egg white and the 1 tablespoon water; brush over breadsticks. Sprinkle with the 1 or 2 tablespoons Parmesan cheese. Bake in a 350°F oven for 15 minutes to 20 minutes or until golden brown. Remove from baking sheets; cool slightly on wire racks. Serve warm or cool.
