This recipe comes from DH's aunt.
Armadillo Eggs
20 whole jalapenos 1 pound pork sausage, either mild or hot 1 cup breadcrumbs 1 egg 1 (8oz) cream cheese, softened at room temperature
Cut off stems of jalapenos. Make a slice lengthwise and remove seeds and membranes. Rinse well.
Fill jalapenos with cream cheese and set aside.
In a bowl combine sausage, egg and breadcrumbs. Make small patties with the sausage mixture and wrap around each jalapeno making sure to seal up well.
Bake on a cookie sheet in a preheat 350* oven for 20-25 minutes.
