Deluxe Fajita Nachos 2-1/2 cups shredded, cooked chicken 1 package (1.27 oz size) fajita seasoning mix 1/3 cup water 8 ounces tortilla chips 1-1/4 cup grated cheddar cheese 1 cup grated Monterey Jack cheese (I used Kraft Mexican Blend) 1 large tomato, chopped 1 can (2-1/4 oz size) sliced ripe olives, drained 1/4 cup sliced green onions Salsa In medium skillet combine chicken, fajita seasoning mix and water; blend well. Bring to a boil; reduce heat and simmer 3 minutes. In large shallow ovenproof platter, arrange chips. Top with chicken and cheeses. Place under broiler to melt cheese. Top with tomato, olives, green onions and desired amount of salsa. Serve with guacamole and/or sour cream. Hint: For a spicier version, add sliced jalapenos. Source: Hurry Up Chicken Recipes

It really was good but what makes me mad is that I bought Penzey's BOLD taco seasoning that I could have used in place of the packaged fajita mix. Bummer..........next time it will be Penzeys.
