Skinny Dip
3 cups low-fat cottage cheese 3 tablespoons lemon juice 1 teaspoon dill weed or dried cilantro 1/2 teaspoon celery salt 1/4 teaspoon turmeric 1/4 teaspoon paprika 1/4 teaspoon black pepper Salt to taste
In a blender or food processor, blend all ingredients, except the salt, until smooth.
Taste, adding salt only if necessary.
Transfer to a serving bowl and garnish with extra paprika and dill weed, if desired. Chill before serving.
Serve with assorted fruit and vegetable dippers and crackers. Makes about 3-4 cups.
Variation:
Substitute 1 cup finely chopped mango for the dill, celery, and turmeric.
