Easy app, can make ahead, and easy to take somewhere.
2 cup grated peeled potatoes (I just use from freezer section), drained and squeezed dry
1 egg white, lightly beaten
1/4 salt; 1/8 pepper
1/3 cup garlic-herb cheese spread
Fresh dill spigs
Combine potato,egg white,salt,pepper. 1 tsp in each of 24 greased mini muffin cups, lining bottom and sides. 375F for 20-25 min, or til golden. Cool for 2 mins, then remove to wire rack, cool completely. Add 1/2 tsp cheese to each nest, garnish with dill. Serve room temp.
