Lemon Asparagus
1 lb. asparagus, cut into 1" pieces (I left mine in 2- 2 1/2" pieces) 2 T. water 2 T. butter, melted 1 t. lemon juice 1 pinch dried tarragon salt & pepper to taste
Snap off woody portion of asparagus - cut remaining into 1 inche pieces Place cut asparagus and water in 1 1/2 qt. microwavable bowl Cover and microvwave on high for 7 - 8 mins. Drain. Add butter, lemon juice and tarragon - toss to coast Spring with salt and pepper
Note: Says you can substitue thyme for the tarragon.
Serves: 4 - 6 (more like 4 servings.. if you like asparagus!)
