This is the only way I make these now - careful cutting the bottom of the chestnut as the shell is very hard and the knife could slip.
ROASTED CHESTNUTS
With a sharp paring knife, cut a 1/2" crisscross gash on the flat side of the nut, cutting down to the meat.
Preheat the oven to 450°. Spread the nuts out on a cookie sheet and bake, stirring once or twice, for 10-20 minutes. Watch carefully, the shells should open which makes it much easier for the nuts to come out. Serve these warm.
