I have made these many times..........generally I make them with the shrimp and crab but tonight I left out the shrimp and used 2 cans of crab. OMG, delish!! I also baked these in the oven and they turned out perfect.
Panda's Seafood Zucchini Boats 1 1/3 C Herb Seasoned Stuffing Mix (like Stove Top) dry 1/2 C shredded Mozzarella cheese 1/3 C hot water 2T chopped onion 3 T melted butter cracked pepper to taste 1 small can crab meat drained (tuna sized can) 6-8 medium to large size precooked shrimp chopped fresh chopped parsley Mix all together. Cut zucchini's lengthwise down the center. Use a spoon to remove the seed center, leaving a zucchini boat "shell". Fill cavity w/ stuffing mix heaping up a bit. Top with another sprinkle of mozzarella and a small pat of butter. Place zucchini boat on a piece of heavy duty foil and bring side up around boat, but do not cover! Put boats on hot grill (approx.) 350 for 30 minutes or till golden and zucchini is fork tender. These reheat nicely too for leftovers. This will make filling for several medium sized zucchinis.

DH ate 2 halves, I was surprised. These are so good and I recommend using the Herb flavored stuffing as the other flavors are too overwhelming.
