SAUTEED SEAFOOD AND RED PEPPERS
2 TBS olive oil 2 salmon filets (6oz each) 1 red bell pepper, sliced thick 8 oz fresh shrimp, shelled and deveined 8 oz fresh sea scallops, rinsed and dried 4 garlic cloves, peeled and chopped 1 TBS lemon or lime juice (fresh is best) 1/2 tsp ground red pepper flakes or cayenne Salt and pepper to taste
Heat olive oil in skillet over med heat Put salmon in skillet, skin side down. Scatter red pepper slices around. Saute for 6 minutes on med heat. Turn salmon 1/2 way through. Add shrimp, scallops, red pepper, salt and pepper. If adding the sugar snap peas, add now. Fry 2-3 more minutes or until seafood is opaque.
