Baked Bay Scallops
(Make ahead garlic butter roll)) 1 cup butter, room temp 1 cup fresh bread crumbs 6 cloves garlic, crushed 2 tablespoon finely minced onion 2 oz (1/4 cup) white wine or sherry juice of one lemon, salt and pepper
Mix together all of the above, form into a roll and wrap in waxed paper, Chill until firm(at least one hour)
Pre heat oven to 450, Grease shallow baking dish
2 TBSp veg oil 2Tbsp diced onion 1 1/2 lb scallops 1/2 lb mushrooms, sliced
Heat oil in large skillet over med heat until haze forms. Add diced onion and saute until soft but not browned. Add scallops and mushrooms, salt and peper to taste, saute briefely. Drain off liquid. Arrange scallops and mushrooms in the prepared dish. Slice the garlic butter and arrange evenly over scallops. Bake until butter is hot and bubby (about 5-10 min) Serve immediately
