I came up with this recipe from looking at several different ones. This is a very basic and mild version of some of the tacos and really you can mix up whatever you have on hand to customize yours.
Fish Tacos
1 1/4 cup all purpose flour
2 teaspoons baking powder
1 egg
1 cup water
1 tablespoon vegetable oil
10 ounces to 1 pound mild white fish (cod, haddock), cut into large serving pieces
2 cups shredded green cabbage
8 (6-inch) corn tortillas
Mayonnaise
Shredded Mexican cheese
Fresh cilantro
Vegetable oil for deep frying
Lime wedges
Salsa, optional
Stir the flour and baking powder together in a medium bowl. Whisk the egg, water, and oil in a separate bowl, just until blended. Stir the egg mixture into the dry ingredients until a slightly lumpy batter forms. The batter should be thick. Let the batter rest for 10 minutes.
Pour enough oil into a 2 qt. saucepan to 2" deep. Heat over med. heat until 350*. Dip the fish into the batter and then immediately into the hot oil. Deep fry until the batter is golden brown and the fish is cooked through. Remove with a slotted spoon and drain on a rack or on paper towel.
Steam tortilla shells until soft......I use the microwave to do mine. Place a moist paper towel on a plate, add tortillas and cover with another moist paper towel. Microwave on high 12 seconds per tortilla.
Spread a little mayo on each tortilla, add torn cilantro leaves, fish, shredded cabbage, cheese. Squeeze a little lime, if desired, over each taco.
I think you could really do these anyway you wish and add whatever you want. Jalapenos would probably taste great on these too.
