Cheesy Mexican Meatloaf 1 can Campbell's Condensed Nacho Cheese soup 2 lbs. ground beef 1 cup dry bread crumbs 2 egg, beaten 1 medium onion, chopped 1 carrot, shredded 1 clove garlic, chopped Hot pepper rings Method Mix ½ can soup, beef, bread crumbs, eggs, onion, carrot and garlic thoroughly. Shape firmly into 8"x4" loaf in baking pan. BAKE at 350°F. 30 min. Spoon remaining soup over meatloaf. Bake 30 min. more or until done. Top with hot pepper rings before serving. I just happened to use a fancy tube pan to make it this time for the picture so I baked it for an hour and then inverted it to put the soup on & then stuck it under the broiler for a couple of minutes. ;D
