I use this marinade for beef tenderloin roast and cook on the grill. Last night I cooked my eye of the round on my rotisierre and it was awesome. The vinegar really helped to tenderize the meat.
Here's the marinade (which as I said I use a whole tenderloin... 2-3#, trimmed and tied). I cook on the grill for 45 mins - for med. rare. High on all sides to brown and turn down to medium - you have to check it with a thermometer.. Also on a tenderloin, I marinade over night. The eye of the round was in the marinade from Sat. AM until Sun PM.
Make sure to bring beast to room temperature..
Romano's Beef Marinade
1/4 c. bourbon 1/2 c. soy sauce 1/4 c. balsalmic vinegar 1/2 c. olive oil 4 large garlic cloves (whole or smashed) 1 pkg good season italian dressing
Mix together. Pour in large bag with beef and marinate for at least 6 hours (24 hours is better!)
Simliar to the Jack Daniels marinades that you can buy in the grocery store, but so much more flavorfull!
