Got this recipe from recipegoldmine and made it last night. It was good for a quick fix meal. I added some extras and changed a few things. Here's my version 1 1/2 lb. ground beef, browned 1 pkg. taco seasoning mix (I used the new Ortega Chipotle. ) 1/2 c. water 1 8oz can of tomato sauce 1 12 oz can whole-kernal corn, drained 1 4-oz can chopped green chilies 1 8 1/2 oz pkg. corn muffin mix Grated Cheedar cheese 1/2 cup 3 T fresh cilantro Brown meat, add taco mix, water, tomato sauce, drained corn, green chilies. Simmer for 3 mins then pour in 2 qt. casserole. Prepare corn muffin mix in med. bowl according to package directions. NOTE: This was my addition: add 1/2 cup grated cheese and 3 T. fresh cilantro. Spoon corn muffin mixture around outer edge of casserole. (Next time: I'll use 2 corn muffin mixtures so it's completely covered). Bake uncovered, 20 min. (Orginal recipe has you sprinkle cornbread with grated cheddar and return to oven for 2-3 more min. until cheese melts. I didn't do this as if my DS even sees cheese, he won't eat it!) Served it with Jewel's poppers and cukes,onions and tomatoes. Here's a photo..
