Here is one of my favorite ways to eat onions. It is a healthy condiment that I always try to keep in my fridge in case I want to add it to chicken or fish dishes. I also love it on hamburgers and even sprinkle it onto pizza.
Triple Onion Confit
2 tablespoons unsalted butter
½ cup extra-virgin olive oil
6 onions, peeled, halved and thinly sliced: 2 red, 2 yellow, 2 white
1 teaspoon freshly ground black pepper
2 tablespoons sherry vinegar
Heat the butter and oil in a large saucepan over low heat. Add onions and pepper and cook approximately 35 to 40 minutes, stirring occasionally. Add the sherry vinegar and cook an additional 15 minutes, stirring occasionally. Remove from heat and cool. Store covered in refrigerator for up to 3 days. This can also be frozen.
Makes 2 cups.
