These are excellent croutons........I just served mine with a salad but I think these would be wonderful in soup, especially tomato or red pepper. I also used a homemade pesto sauce. Pesto Croutons 2 cups (about 3 ounces) 3/4-inch stale bread cubes 3 tablespoons store-bought pesto 1/4 teaspoon kosher salt 1/8 teaspoon freshly ground black pepper Heat oven to 400° F. Place the bread in a large bowl. Stir in the pesto, salt, and pepper and toss well to combine. Spread out on a rimmed baking sheet and bake until golden, about 10 minutes Yield: Makes 2 cups Real Simple, APRIL 2005
