Blue Cheese Steak Topper INGREDIENTS: 1/4 cup green onion, thinly sliced 1/4 cup blue cheese, crumbled 2 tablespoons soft goat cheese (chevre) 2 cloves garlic, minced PREPARATION: Combine all ingredients and gently mix together until even, but not blended smooth. It should be coarse in texture. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Gorgonzola Butter Cooking Conversion Table Ingredients: 1 pound soft butter 2/3 pound Gorgonzola cheese (use a stronger blue cheese if you like a stronger flavor, see Blue Cheese Butter ) 1 teaspoon Worcestershire sauce 1 teaspoon fleshly ground black pepper Instructions: Cream the butter until smooth Gently fold in the Gorgonzola cheese, Worcestershire and fresh pepper (some pieces - small chunks - of cheese should remain) Roll in plastic wrap, twist ends and store in refrigerator Cut into slices to top steaks Now that wasn't difficult, was it?
