Here are just a few toppings we have on our homemade pancakes and waffles - regular or flavored ones work great too.
Raspberry Butter
1/2 cup (1 stick) unsalted butter, softened 1/3 cup seedless raspberry jam 1/4 fresh or thawed frozen raspberries, optional
Mix all ingredients well in bowl..........transfer to a ramekin and serve. Refrigerate leftovers. ******************************************** *******
Pecan Honey
2 tsp unsalted butter 1/2 cup coursely chopped pecans 1/2 cup honey
IN a small skillet, melt butter. Add pecans and cook, stirring for about 5 minutes or until toasted and fragrant. Careful not to burn. Stir in honey and heat until honey is runny. Serve warm. ******************************************** *******
Blueberry Syrup
1 pint fresh or thawed frozen blueberries 1 cup sugar 1-1/2 TBS fresh lemon juice 1/2 tsp ground cinnamon 1/8 tsp fresh grated or powdered nutmeg
In a food processor, puree blueberries. Pour into a medium saucepan and stir in sugar. Bring to a boil over medium heat or 5 minutes. Scrape through a fine mesh sieve into a 2 cup bowl. Whisk remaining ingredients into blueberry mixture. Can serve warm. Refrigerate leftovers for up to 3 days.
