I duplicated this from a restaurant in VA. It is real good and great for company. Corned Beef & Potatoes w/Hollandaise Sauce Boiled cubed potatoes (not quite done) 1/2 lb. deli corned beef (I use Boars Head –it’s the best), diced or thinly sliced 1 to 2 packets Hollandaise Sauce Blend (I like McCormick) – prepare while potatoes are crisping. (I like to use milk and not water in the sauce, makes it creamier). Crisp up the potatoes in a frying pan with a little bit of oil, add corned beef and heat trough. In a separate pan, fry up an egg for each serving. Plate the potatoes/corned beef, spoon on hollandaise sauce and top with a fried egg. When I make this for larger crowds, I cheat and buy the fresh precooked potatoes in the refrigerated section.
