White Cake 2-1/2 cups all purpose flour 2 cups sugar 1 tsp baking powder 1/2 tsp baking soda 1-1/3 cups buttermilk or sour milk 1/2 cup shortening, butter or margarine 1 tsp vanilla 4 egg whites In a bowl combine flour, sugar, baking powder, baking soda and 1/8 tsp salt. Add buttermilk, shortening, and vanilla. Beat with an electric mixer on low speed for 30 seconds, scraping bowl. Beat on medium to high speed for 2 minutes, scraping bowl occasionally. Add egg whites and beat for 2 minutes more, scraping bowl. Pour batter into 2 greased and floured 9x1-1/2 inch round baking pans Bake for 350 degrees for 30-35 mintutes or till a toothpick inserted in center comes out clean. Cool on wire racks for 10 minutes. Loosen sides. Remove from pans. Cool thoroughly on wire racks. Creamy White Frosting 1 cup Crisco 1/2 cup butter, softened to room temperature (do not substitute) 6-1/2 cups powdered sugar 1/2 cup whole milk 1 TBS vanilla extract In a large mixing bowl, beat shortening and butter until blended. Add powdered sugar alternating with milk and vanilla. Beat until smooth and spreading consistency. makes about 5 cups
