Cream Cheese Frosting
2 (3oz) packages cream cheese, softened 2-1/2 cups powdered sugar 1 tsp fresh lemon juice 1/2 tsp vanilla extract
In a large bowl, beat cream cheese with electric mixer on medium speed until smooth. Reduce speed to low and beat in remaining ingredients.
Increase speed to high and beat for 2 more minutes or until light and fluffy.
You may have to refrigerate before icing a cake if too soft.
