Chicken Tortilla Soup1 10 ¾ oz can tomato soup, undiluted 1 soup can filled w/milk 1 10 ¾ oz cream of chicken soup 1 14 ½ oz can chicken broth 1 14 ½ can diced tomatoes, undrained ½ cup chopped onion ¼ cp chopped green pepper 1 lb cooked , boneless, skinless chicken breast, cubed or cut up 1 tsp chili powder ½ tsp ground cumin 1/8 tsp ground black pepper salsa to taste shredded cheddar cheese tortilla chips Combine the tomato soup, milk, cream of chicken soup and chicken broth. Puree in a blender or food processor. In a large saucepan, combine the tomatoes, onion and green pepper. Bring to a boil. Add contents of blender/food processor. Bring to a boil again. Add the chicken and reduce the heat. Cover and simmer for 10 minutes. Add the chili powder, cumin and pepper. Add salsa if desired. Simmer, covered, for about 10 minutes more. To serve, place crushed tortilla chips into bowl. Ladle the soup over tortilla chips. Sprinkle with cheese. ***Add ground cayenne pepper for a spicier soup. Add whipping cream instead of milk for a thicker soup.*** IMO as well as everyone who has tried this, it tastes very similar to Max & Erma's.

I just made this tonight but had to use ingredients I had on hand. I used cream of celery soup in place of the cream of chicken but added a tsp of chicken soup base to it. I also used rotels in place of the diced tomatoes, a small can of diced chilies in place of the green pepper. I made rice to add to the bottom of the bowls and topped our soup with cheddar cheese and fried flour tortilla strips. Your soup is excellent and I think with all my changes, it probably didn't make much of a difference.

Yeah, as long as I add milk and not heavy cream then I don't feel guilty when eating it. Glad you added the Rotel and peppers for extra spice. I can't handle too much so I just add a little powdered cayanne pepper.
We're going to have to have this soon! I'll be back to post a picture too! It's been too long since we had it last!
