One of hubby's favorite soups and great with crusty Italian or French bread. Cheeseburger Soup 1/2 pound ground beef 3/4 cup chopped onion 3/4 cup shredded carrots 3/4 cup diced celery 1 tsp dried basil 1 tsp dried parsley 4 TBS butter, divided 3 cups chicken broth 4 cups potatoes, diced 1/4 cup flour 8 ounces Velveeta, cubed 1-1/2 cups milk 3/4 tsp salt 1/3 tsp pepper 1/4 cup sour cream In a 3 quart saucepan, brown the beef; drain and set aside. In the same pan, melt 1 TBS of the butter and saute the onions, carrots, celery, basil and parsley until tender. Add broth, potatoes and browned beef. Bring to a boil and then reduce heat, cover and simmer for about 15 minutes. Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir continually for about 3-5 minutes or until browned and bubbly. Add to soup and bring to a boil. Cook and stir for another 2 minutes. Reduce heat to low. Add the cheese, milk, salt and pepper. Simmer and stir until the cheese melts. Remove from heat and stir in sour cream.
