Sausage Spinach Bake 1 lb. Bob Evans Savory Sage Sausage Roll 1 1/2 cups milk 4 eggs 1 box (10 oz.) frozen chopped spinach, thawed and well-drained 1/3 cup diced roasted red peppers 4 plum tomatoes, thinly sliced 1/4 cup Parmesan cheese Preheat oven to 350F. In skillet, crumble and cook sausage over medium heat until browned. Drain drippings. In large bowl, whisk milk and eggs until combined. Stir in spinach, peppers and sausage. Spread into greased 11" x 7" pan. Layer sliced tomatoes on top. Bake for 45 minutes. Sprinkle cheese on top. Bake for 5-10 minutes more or until set in center. Made this on Sunday. Fast and easy. I had to use Jimmy Dean sausgae, cuz that's all that was in the store.. and it wasn't sage. It was ok. Perhaps the sage sausage would have given it more flavor, don't know?? I love spinach but thought it had way too much. It just seemed to be missing something? Thanks Bucks.. and if I ever see Bob Evans Sage Sausage, I'm going to buy!!

I tend to add more parmesan cheese and tomatoes. I love the saltiness of the cheese on the top layer. Maybe it's the extra cheese? I like shredded parm vs grated with this.
Did you use plain or seasoned sausage? Maybe next time, if only plain sausage is available you could add seasoning while browning it?
