Asparagus Quiche --10 bacon strips, cooked & crumbled OR 1/2 cup bacon bits --1/2 cup chopped onion --1 lb. fresh asparagus, trimmed --1 1/4 cup shredded gruyere or swiss cheese --1 Tbsp. flour --1/4 tsp. salt --1/4 tsp. pepper --3 eggs --1/2 cup half & half or cream --1 unbaked pie shell In a skillet, cook bacon over medium heat until crisp. Drain, but reserve 1 Tbsp. drippings and saute onion in drippings until tender, drain. If not using real bacon, saute onion in olive oil (about 2 Tbsp). Trim asparagus stalks and cut into 1 inch pieces. In a saucepan, cook all asparagus in a small amount of boiling water until crisp-tender. Drain. In a bowl, toss the bacon (or bacon bits), sauteed onion, asparagus, cheese, flour, salt and pepper. Pour into unbaked pastry shell. In a bowl, beat eggs and cream; pour over asparagus mixture. Bake at 400 degrees for 30-35 minutes; til knife inserted in middle is clean. Picture below:
