Egg Strata
8 eggs, beaten 5 cups whole milk 12 slices buttered bread, crust on (I prefer a soft crust French) 1 pound sharp cheddar cheese (or your preference - fontina is good too), shredded 1 tsp dry mustard salt and pepper to taste sweet paprika to taste
Using a 9x13 baking dish, layer the bread, then the cheese, and repeat until all is used but topping with cheese. Beat eggs, milk, dry mustard, salt and pepper and pour over bread and cheese mixture. Sprinkle generously with paprika. Cover and refrigerate over night.
Next day, preheat oven to 350* and bake for one hour or until golden on top. Watch very closely so not to scorch. Will puff up while baking so make sure you have a taller side dish or not to overfill.
***NOTE: can add cooked ham, bacon, sausuage and should be layered before the cheese. I have also added cooked broccoli, sauteed onions & peppers before.
