Easy Hamburger Wedges
Ingredients:
1/2 lb ground beef
1/2 cup stale breadcrumbs
1 egg (beaten lightly)
1 tablespoon finely chopped onion
2 teaspoons olive oil
2 cheese slices 2 pita pockets
2 tablespoons ketchup
Vegetable oil for frying
Directions:
Combine ground beef, egg, breadcrumbs and onion in medium bowl. Shape into two patties. Heat oil in frying pan and cook patties until browned on each side and cooked through. Place cheese on top of patties during last few minutes of cooking to melt. Split pita in half. Spread each side with ketchup top with patties and remaining pita. Cut into wedges. Serve with potato wedges and salad.

Ingredients:

These veggie and beef patties are a great way to get your kids to eat their veggies!
1/2 lb ground beef
1 small carrot (peeled and grated)
1 small potato (peeled and grated)
1/2 small onion (finely chopped)
1 tablespoon parsley (finely chopped)
1 egg (lightly beaten)
1 tablespoon ketchup
Vegetable oil for frying
Directions:
Combine ground beef, carrot, potato, parsley, onion and ketchup. Shape into patties. Heat oil in frying pan and cook patties until browned on each side and cooked through. Serve patties on hamburger rolls with tomato and lettuce if desired.

Ingredients:
1 teaspoon olive oil
1/2 small onion (finely grated)
1 clove crushed garlic (or 1 teaspoon garlic powder)
1 carrot (finely grated)
1/2 small summer squash (finely grated)
1/2 small zucchini (finely grated)
3/4 cup rolled oats
2 tablespoons shredded cheddar cheese
1 egg (beaten)
1 1/2 teaspoon soy sauce
3/4 cup all-purpose flour
Directions:
Heat the olive oil in frying pan over low heat. Add onion and garlic and cook for 3 to 5 minutes or until tender. Mix in the carrots, squash, and zucchini. Continue to cook and stir for 2 minutes. Remove pan from heat and add oats, cheese, egg and soy sauce. Transfer mixture to bowl and refrigerate 1 hour (or until mixture is firm). Shape veggie mixture into four patties. Place flour on a large plate and drop each patty into the flour, lightly coating both sides. Shallow fry, grill or barbecue for 5 minutes on each side or until heated through and browned.
Extra Tip:
If mixture is a little sticky try adding a little flour to the veggie mixture.

1/2 cup rolled oats
1 slice day old bread (finely crumbled)
1 teaspoon onion powder
1 teaspoon garlic powder
Vegetable or olive oil for shallow frying
Directions:
Mix all ingredients (except oil) together. Knead for a minute or so, until the mixture holds together and shape into patties. Cook in frying pan for about 2 minutes on each side or until lightly browned and heated through.
